Cottage Pie


There is no doubt about it, cottage pie is one of those comforting winter dishes that satisfies. It isn't the quickest dish to throw together, it takes time to peel and cut the potatoes and cook them up whilst you cook all the other ingredients but it's worth the time.

YOU WILL NEED.

2 cups of green or brown lentils.
One Onion.
4 cloves of garlic.
2 sticks of celery.
1 large carrot.
1 cup of sliced mushrooms
1 tin of tomatoes.
1 tsp of tomato puree.
Some vegetable stock.
1 bay leaf.
Black pepper.
Sea or Rock salt.
8 medium white potatoes.
A knob of dairy free butter.
a splash of dairy free milk.
1 tbsp of nutritional yeast. (optional)

Method.



Put the lentils in a saucepan and cover with water.  Bring them to the boil and simmer for twenty minutes being careful not to let them boil dry.

Meanwhile peel the carrots and potatoes. Chop the onions, celery, mushrooms and garlic. 





Place the potatoes in a large pot of water and boil them up. Leave them simmering until they are soft enough to mash and in the mean time you can cook up the rest of the ingredients. 

Fry the onions and garlic lightly in a little bit of oil, black pepper and sea or rock salt. Add the celery and tomatoes and gradually stir in the carrots. Cover a simmer for a while to soften the carrots before adding the lentils, the mushrooms and the stock. Now put  a tsp of thyme, one bay leaf. Simmer for about ten to fifteen minutes until the mixture thickens. 



Place the mixture into a shallow oven proof dish and leave to cool slightly.

Pre Heat the oven to about 200 degrees C approximately gas mark 6.

Meanwhile drain the potatoes and stir in the dairy free butter. Begin to mash and as you do add a splash of the dairy free milk to desired consistency.  Sprinkle through the nutritional yeast for a slightly nutty flavour. 

Spoon the potato out onto the casserole and smooth out evenly with a fork. 
I like to make little tartan patterns on mine.

Place in the oven for about 30 minutes until it browns.  You can always pop it under the grill for five minutes at the end of cooking to brown it further.  



Enjoy this filling tasty meal on its own or with a side salad and some bread. But I trust you won't need much else to go with it.
